Fish was the most important animal-protein food in the traditional Norwegian diet. The supply of fish was fairly reliable, as people lived along the coast where salt-water fish was plentiful or in the valleys where the rivers and lakes supplied them with fresh-water fish. Lutefisk, rakefisk and herring were an important and popular part of the ancient Norwegian diet. They have retained their importance and popularity over several hundred years, even up to this day. Their history, however, is little known. This book will try to make up for that.
